Cremeschnitte

Ingredients:

For the pastry:

  • 2 sheets of puff pastry (you can use store-bought sheets)
  • 1 egg yolk (for glazing)

For the cream:

  • 500 ml milk
  • 1 packet of vanilla sugar
  • 6 tablespoons sugar
  • 4 egg yolks
  • 1 packet of vanilla pudding powder
  • 250 ml heavy cream
  • 2 tablespoons powdered sugar (for whipped cream)

For dusting:

  • Powdered sugar (optional)

Instructions:

1. Prepare the pastry:

  1. Roll out both sheets of puff pastry to fit the size of the baking tray in which you will bake the Cremeschnitte. It is recommended to use a square or rectangular baking tray.
  2. Place the first sheet of puff pastry on the tray, prick it with a fork, and brush it with egg yolk.
  3. Bake in a preheated oven at 200°C (392°F) for about 15-20 minutes, or until the pastry is golden brown.
  4. Once the first pastry sheet is baked, repeat the process with the second sheet of pastry.
  5. Bake both sheets of puff pastry until they are crispy and golden brown. Let them cool.

2. Prepare the cream:

  1. In a bowl, mix the egg yolks, sugar, vanilla sugar, and pudding powder.
  2. Add 200 ml of milk and whisk everything together into a smooth mixture.
  3. Heat the remaining milk in a pot until it starts to boil.
  4. Once the milk boils, pour the egg-pudding mixture into the hot milk, stirring constantly until the cream thickens. Cook for a few more minutes.
  5. Remove the cream from the heat and let it cool, stirring occasionally to prevent a skin from forming on the surface.

3. Prepare the whipped cream:

  1. Whip 250 ml of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.

4. Assembling the Cremeschnitte:

  1. Place one sheet of baked puff pastry in the bottom of the tray.
  2. Spread the cooled cream evenly on top of the pastry.
  3. Spread the whipped cream over the cream layer and smooth it out.
  4. Place the second sheet of baked puff pastry on top.

5. Serving:

  1. Allow the Cremeschnitte to cool in the refrigerator for at least 2 hours.
  2. Before serving, dust with powdered sugar.

Tip: You can serve the Cremeschnitte chilled, and if desired, you can decorate them with whipped cream or fruit.
