
Ingredients:
For the pastry:
- 2 sheets of puff pastry (you can use store-bought sheets)
- 1 egg yolk (for glazing)
For the cream:
- 500 ml milk
- 1 packet of vanilla sugar
- 6 tablespoons sugar
- 4 egg yolks
- 1 packet of vanilla pudding powder
- 250 ml heavy cream
- 2 tablespoons powdered sugar (for whipped cream)
For dusting:
- Powdered sugar (optional)
Instructions:
1. Prepare the pastry:
- Roll out both sheets of puff pastry to fit the size of the baking tray in which you will bake the Cremeschnitte. It is recommended to use a square or rectangular baking tray.
- Place the first sheet of puff pastry on the tray, prick it with a fork, and brush it with egg yolk.
- Bake in a preheated oven at 200°C (392°F) for about 15-20 minutes, or until the pastry is golden brown.
- Once the first pastry sheet is baked, repeat the process with the second sheet of pastry.
- Bake both sheets of puff pastry until they are crispy and golden brown. Let them cool.
2. Prepare the cream:
- In a bowl, mix the egg yolks, sugar, vanilla sugar, and pudding powder.
- Add 200 ml of milk and whisk everything together into a smooth mixture.
- Heat the remaining milk in a pot until it starts to boil.
- Once the milk boils, pour the egg-pudding mixture into the hot milk, stirring constantly until the cream thickens. Cook for a few more minutes.
- Remove the cream from the heat and let it cool, stirring occasionally to prevent a skin from forming on the surface.
3. Prepare the whipped cream:
- Whip 250 ml of heavy cream with 2 tablespoons of powdered sugar until stiff peaks form.
4. Assembling the Cremeschnitte:
- Place one sheet of baked puff pastry in the bottom of the tray.
- Spread the cooled cream evenly on top of the pastry.
- Spread the whipped cream over the cream layer and smooth it out.
- Place the second sheet of baked puff pastry on top.
5. Serving:
- Allow the Cremeschnitte to cool in the refrigerator for at least 2 hours.
- Before serving, dust with powdered sugar.
Tip: You can serve the Cremeschnitte chilled, and if desired, you can decorate them with whipped cream or fruit.
