Day and night cake, tastes excellent!

Ingredients:

  • 180g sugar
  • 6 eggs (4 yolks separated)
  • 250g flour
  • 1 packet vanilla sugar
  • Butter for greasing the baking tray
  • 3–4 tbsp cocoa powder
  • 220g butter
  • 1 packet baking powder
  • 50g walnuts, halved

Instructions:

1. Prepare the Batter: Start by creaming together the vanilla sugar, butter, sugar, one egg, and five egg yolks in a mixing bowl. Use an electric mixer to make the mixture light and fluffy. Once everything is well combined, add the flour and baking powder. Mix until smooth.

    2. Whip the Egg Whites: In a separate bowl, beat the five egg whites until stiff peaks form. Carefully fold the whipped egg whites into the prepared batter. This step adds air to the batter, making it light and fluffy.

      3. Prepare the Base: Grease a baking tray with butter and spread about two-thirds of the batter evenly on the tray. The batter should cover the entire base.

        4. Make the Cocoa Mixture: In a small bowl, take the remaining one-third of the batter and mix it with 3–4 tablespoons of cocoa powder. Stir well until fully combined. Using a spoon, place small dollops of this cocoa mixture onto the already spread batter on the tray. The dollops should be spread out but not too far apart.

          5. Add the Walnuts: Place half a walnut on top of each cocoa dollop. This will give the cake a delightful crunch and flavor once baked.

            6. Baking: Preheat your oven to 190°C (375°F). Bake the cake for about 20 minutes, or until a toothpick inserted into the center comes out clean. Keep a close eye on it to avoid overbaking.

              7. Add the Milk: Once the cake is out of the oven and still hot, pour 200ml of hot milk evenly over the surface of the cake. Use a spoon to spread the milk, making sure it soaks into the cake. Let the cake cool down completely, allowing the flavors to meld together.

                8. Optional Chocolate Glaze: If you’re a chocolate lover, you can top the cooled cake with a chocolate glaze. This adds an extra layer of indulgence and makes the cake even more delicious. Simply melt some chocolate with a bit of butter and pour it over the cake for a glossy finish.
