Ingredients

For the Meringue Base:

  • 9 egg whites
  • 300 g sugar
  • 1 tbsp apple cider vinegar

For the Cream:

  • 9 egg yolks
  • 4 tbsp sugar
  • 3 sachets vanilla sugar
  • 4 tbsp flour
  • 1 tbsp cornstarch
  • 300 ml milk
  • 1 block of butter or margarine
  • 500 ml whipping cream
  • 4 bananas
  • 5 kiwis
  • 500 g strawberries
  • Lemon juice

Instructions

To Make the Meringue Base:

  1. Whisk the egg whites until stiff peaks form. Gradually add the sugar and vinegar while continuing to whisk until the mixture becomes glossy and firm.
  2. Spread the meringue mixture onto a greased baking paper or aluminum foil, shaping it into a large rectangle or circle on a baking sheet.
  3. Bake in a preheated oven at 150°C (300°F) for about 1 hour, or until the meringue is lightly golden.
  4. Allow the baked meringue to cool completely, then carefully remove it from the baking paper. Cut it into three equal parts for layering.

To Prepare the Cream:

  1. In a mixing bowl, beat the egg yolks, sugar, and vanilla sugar until pale and fluffy. Gradually add the flour, cornstarch, and milk, stirring until smooth.
  2. Cook the mixture in a double boiler or over low heat for 10–15 minutes, stirring constantly, until it thickens into a custard.
  3. Let the custard cool completely, then beat in the softened butter or margarine until the cream is smooth and fluffy.

To Assemble the Cake:

  1. Slice the bananas, kiwis, and strawberries. Drizzle the banana slices with lemon juice to prevent browning.
  2. Whip the cream until stiff peaks form.
  3. Place the first meringue layer on a serving plate. Spread a third of the custard over it, then arrange kiwi slices on top, followed by a layer of whipped cream.
  4. Add the second meringue layer and repeat the process, using strawberries this time.
  5. Place the final meringue layer on top, spread the remaining custard, and finish with bananas and whipped cream.

Chill the Cake:
Refrigerate the cake for at least 2–3 hours or overnight. Chilling allows the layers to set and makes the cake easier to slice and serve.
