For the Meringue Base:
- 9 egg whites
- 300 g sugar
- 1 tbsp apple cider vinegar
For the Cream:
- 9 egg yolks
- 4 tbsp sugar
- 3 sachets vanilla sugar
- 4 tbsp flour
- 1 tbsp cornstarch
- 300 ml milk
- 1 block of butter or margarine
- 500 ml whipping cream
- 4 bananas
- 5 kiwis
- 500 g strawberries
- Lemon juice
Instructions
To Make the Meringue Base:
- Whisk the egg whites until stiff peaks form. Gradually add the sugar and vinegar while continuing to whisk until the mixture becomes glossy and firm.
- Spread the meringue mixture onto a greased baking paper or aluminum foil, shaping it into a large rectangle or circle on a baking sheet.
- Bake in a preheated oven at 150°C (300°F) for about 1 hour, or until the meringue is lightly golden.
- Allow the baked meringue to cool completely, then carefully remove it from the baking paper. Cut it into three equal parts for layering.
To Prepare the Cream:
- In a mixing bowl, beat the egg yolks, sugar, and vanilla sugar until pale and fluffy. Gradually add the flour, cornstarch, and milk, stirring until smooth.
- Cook the mixture in a double boiler or over low heat for 10–15 minutes, stirring constantly, until it thickens into a custard.
- Let the custard cool completely, then beat in the softened butter or margarine until the cream is smooth and fluffy.
To Assemble the Cake:
- Slice the bananas, kiwis, and strawberries. Drizzle the banana slices with lemon juice to prevent browning.
- Whip the cream until stiff peaks form.
- Place the first meringue layer on a serving plate. Spread a third of the custard over it, then arrange kiwi slices on top, followed by a layer of whipped cream.
- Add the second meringue layer and repeat the process, using strawberries this time.
- Place the final meringue layer on top, spread the remaining custard, and finish with bananas and whipped cream.
Chill the Cake:
Refrigerate the cake for at least 2–3 hours or overnight. Chilling allows the layers to set and makes the cake easier to slice and serve.
