Grandma’s kitchen – fantastic cake with coconut and Nutella.

Ingredients:

For the Cake Base:

  • 3 eggs
  • 150 g sugar
  • 150 g flour
  • 80 g shredded coconut
  • 80 ml oil
  • 1 packet baking powder
  • 1 packet vanilla sugar

For the Filling and Topping:

  • 200 g Nutella
  • 2–3 tbsp jam (flavor of your choice, e.g., apricot or raspberry)

Preparation:

1. Prepare the Batter:

  • Preheat your oven to 180°C (350°F) and line a baking pan (approximately 20×20 cm or similar) with parchment paper.
  • In a mixing bowl, beat the eggs with the sugar and vanilla sugar until the mixture is pale and fluffy.
  • Gradually add the oil in a thin stream while mixing continuously to achieve a smooth consistency.
  • Sift together the flour and baking powder, then fold them gently into the egg mixture. Add the shredded coconut and mix until just combined.

2. Bake the Cake Base:

  • Pour the batter into the prepared pan, spreading it evenly. Bake in the preheated oven for 20–25 minutes or until a toothpick inserted into the center comes out clean.
  • Remove the cake from the oven and allow it to cool completely before proceeding with the filling.

3. Assemble the Cake:

  • Once cooled, spread a thin layer of jam over the entire surface of the cake. This adds a subtle tanginess and keeps the cake moist.
  • Warm the Nutella slightly (if needed) to make it easier to spread, then generously coat the top of the cake with it.

4. Optional Decoration:

  • For an added touch, sprinkle some shredded coconut over the Nutella layer or decorate with chocolate shavings, nuts, or berries as desired.

5. Serve:

  • Slice the cake into squares or rectangles and serve. It pairs wonderfully with a cup of coffee or tea and is perfect for family gatherings or as a treat for special occasions.

This cake combines the rich creaminess of Nutella with the delicate texture of coconut, creating a dessert that is simple yet utterly delicious. Enjoy a taste of tradition with this delightful recipe from Grandma’s kitchen! 🍰🥥
