Layered Burek

Layered burek is a traditional dish popular in Balkan cuisine. It is a type of pie that is prepared by layering the dough, and then baking it, giving it a characteristic crispy texture and rich flavor. Burek is usually filled with meat, but it can also be made with cheese, potatoes, or even vegetables. In this recipe, we will use the classic version with meat, specifically ground meat, and explain how to make layered burek.

Ingredients:

  • 500g of ground meat (usually beef or a mix of pork and beef)
  • 1 onion
  • 2 cloves of garlic (optional)
  • 1 teaspoon of dried oregano or thyme
  • Salt and pepper to taste
  • 300g of sour cream (optional, can also use yogurt)
  • 1 package of ready-made phyllo dough (about 500g)
  • 100ml of oil or melted butter (for greasing the dough)
  • 1 egg (for brushing)
  • 1 teaspoon of baking powder (optional, if you want softer dough)

Preparation:

1. Prepare the filling:

  • In a large pan, heat some oil and sauté the chopped onion until it becomes translucent (about 5 minutes).
  • Add the ground meat and cook until it turns a nice brown color, stirring occasionally. Add the garlic (if using) and cook for another 2-3 minutes.
  • Season with salt, pepper, and dried oregano or thyme, and mix well. Set aside to cool.

2. Prepare the dough:

  • If you are using ready-made phyllo dough, separate the sheets and arrange them on a clean surface. If you are using homemade dough, roll it out as thinly as possible.
  • Prepare the oil or melted butter for greasing the dough. Take one sheet of phyllo dough, grease it with oil or butter, then place another sheet on top. Repeat this process until you have used about 6-7 sheets (depending on the size of your baking dish and the number of layers you want).

3. Assemble the burek:

  • On the first layered sheet, evenly distribute some of the meat filling. Then take the next sheet, grease it, and place it on top of the filling.
  • Continue layering the dough and filling, gradually forming the burek. Finally, place the remaining sheets of dough on top.
  • Once you’ve finished layering, fold the burek into a roll or spiral shape, so that the burek resembles a spiral. It is recommended to place the burek into a greased baking dish.

4. Baking the burek:

  • Preheat your oven to 180°C (350°F). Before placing the burek in the oven, brush it with a beaten egg for a nice golden-brown color.
  • Place the burek in the preheated oven and bake for about 45-60 minutes, or until it turns golden-brown and crispy. Check it occasionally to ensure it bakes evenly.

5. Serving:

  • Once the burek is baked, remove it from the oven and let it cool slightly before cutting it. You can serve it with yogurt, sour cream, or a salad of your choice.

Tips:

  • For a juicy burek: If you want a juicier burek, you can add some sour cream or yogurt to the meat filling.
  • Enhance the flavor: Adding breadcrumbs to the filling can help make it juicier and richer. You can also add some yeast for softer dough.
  • For a vegan version: Instead of ground meat, you can use mushrooms, soy, or even vegetables like potatoes, spinach, or leeks.
