Here’s a helpful recipe for those fasting. This cake is also suitable for water fasting since it contains no oil. Similar to a traditional monastery cake, it includes several ingredients to improve its flavor. The preparation only takes a few minutes, and you don’t need a mixer. The measurements are provided in tablespoons for convenience, making this recipe straightforward and easy to follow.

Ingredients:

  • 400 ml lukewarm water
  • 8 tablespoons of sugar (roughly 130 g, or more if you prefer a sweeter cake)
  • 5 tablespoons of your favorite jam or fruit preserve
  • 20 tablespoons of flour (around 370 g)
  • 1 packet of baking powder
  • 5 tablespoons of ground walnuts
  • 4 tablespoons of chopped walnuts
  • 3 g cinnamon (or more if you like it spicier)
  • Zest from 1 lemon

For the coating:

  • 4 tablespoons of jam or preserves and ground walnuts, or
  • A glaze made from 100 g powdered sugar (about 4 heaping tablespoons) and the juice of 1 lemon. This will create a thinner glaze. If you prefer a thicker glaze, use less lemon juice. Once the glaze has set, sprinkle with ground walnuts for extra flavor.

Instructions:

1. Start by preheating your oven to 180°C (350°F). Grease and line a cake pan with parchment paper.

    2. In a large mixing bowl, combine the lukewarm water and sugar. Stir until the sugar dissolves completely.

      3. Add the jam or preserve of your choice to the mixture, followed by the flour, baking powder, ground walnuts, chopped walnuts, cinnamon, and lemon zest. Mix everything together until you have a smooth batter. Be sure to combine all ingredients thoroughly.

        4. Pour the batter into your prepared cake pan and smooth the top with a spatula.

          5. Place the pan in the oven and bake for around 30-35 minutes or until a toothpick inserted into the center comes out clean.

            6. While the cake is cooling, prepare the coating. If you’re using jam, simply spread it over the cooled cake, then sprinkle with the ground walnuts. If you prefer a glaze, combine the powdered sugar and lemon juice until you reach the desired consistency. Drizzle the glaze over the cake and sprinkle with walnuts once it has set.

              7. Allow the cake to cool completely before serving.
