Recipe for Beef Burek

Beef burek is one of the most beloved dishes in Balkan cuisine, known for its crispy layers and juicy, seasoned meat filling. This recipe is perfect for those who love traditional flavors and rich taste. Although the preparation might require some patience, the result will be a perfect burek with a delicious and savory filling.

Ingredients:

For the dough:

  • 500 g (about 4 cups) flour
  • 1 teaspoon salt
  • 200 ml (about ¾ cup) lukewarm water
  • 2 teaspoons oil (for the dough)
  • 1 teaspoon vinegar (optional, for dough elasticity)

For the filling:

  • 500 g (about 1 lb) ground beef
  • 1 large onion
  • 3-4 tablespoons oil
  • Salt and pepper to taste
  • ½ teaspoon dried oregano (optional)
  • ½ teaspoon yeast powder (optional, for softer meat)

For brushing:

  • 1 egg
  • Some oil or lard for brushing the layers

Instructions:

1. Prepare the dough:

  • In a large bowl, mix the flour and salt. Gradually add the lukewarm water, 2 teaspoons of oil, and vinegar (if using). Mix and knead until you get a smooth, elastic dough.
  • If the dough is too sticky, add a bit more flour. If it’s too dry, add a little more water.
  • Once the dough is ready, divide it into 4 equal parts, shape them into balls, and brush them with a little oil. Cover them and let them rest for about 30 minutes so the dough can relax and become easier to stretch.

    2. Prepare the filling:

    • Meanwhile, finely chop the onion and sauté it in 3-4 tablespoons of oil until it becomes translucent and soft.
    • Add the ground beef and cook until it’s browned and crispy, stirring occasionally.
    • Season with salt, pepper, and oregano (if using). Let the filling cool down.

      3. Roll out the dough:

      • Once the dough balls have rested, roll each one into a very thin circle. Try to stretch it as thinly as possible so that the burek has many crispy layers.
      • If it’s easier, you can use a rolling pin, but the best way is to stretch the dough with your hands.

        4. Assemble the burek:

        • Place the first rolled-out dough on a well-oiled surface. Brush it lightly with oil or lard.
        • Evenly distribute a portion of the meat filling on top of the dough.
        • Brush the edges of the dough with a little oil. Roll the dough into a log shape.
        • Then, form the log into a spiral or circle, and place it into a greased baking dish.
        • Repeat this process with the remaining dough and filling.

          5. Bake the burek:

          • Before baking, brush the top of the burek with the beaten egg to achieve a golden-brown color.
          • Bake the burek in a preheated oven at 200°C (392°F) for about 30-40 minutes, or until it becomes golden-brown and crispy on top.

            6. Serve:

            • Once the burek is done, remove it from the oven and let it cool for a few minutes before cutting. Serve the burek warm, with yogurt or a salad on the side, if desired.
