Ingredients:
- 500 g flour
- 160 g butter
- 100 g white sugar
- 50 ml whole milk
- 18 g fresh yeast
- 8 g fine salt
- 4 medium-sized eggs
Preparation of Brioche Dough:
- Activate the Yeast: Warm the milk slightly and dissolve the fresh yeast in it. Stir until completely dissolved.
- Combine the Dry Ingredients: In a large mixing bowl, sift together the flour, salt, and sugar. Create a well in the center.
- Incorporate the Wet Ingredients: Add the yeast mixture and eggs to the dry ingredients. Mix everything together to form a dough.
- Knead the Dough: Knead the dough for about 20 minutes until smooth and elastic. Add the butter bit by bit, kneading until fully incorporated.
- Rest the Dough: Place the dough in a greased bowl, cover it with a clean towel, and let it rest in a warm place for about 30 minutes, until it doubles in size.
Shaping the Brioche Bread:
- Divide and Shape the Dough: Punch down the dough, divide it into 50-gram portions, and shape into balls. Place them on a greased tray and let them rise for another 30 minutes.
- Egg Wash: Whisk an egg with a pinch of salt and brush it over the dough before baking.
Baking the Brioche:
- Preheat the Oven: Preheat your oven to 180°C (350°F).
- Bake the Brioche: Bake for 20-25 minutes until golden brown. Check for doneness by tapping the bottom of a loaf—it should sound hollow.
- Cool the Brioche: Allow the brioche to cool on a wire rack before serving.
