Ingredients

For the Cake Batter:

  • 200 g butter
  • 100 g granulated sugar
  • 5 eggs (separate yolks and whites)
  • 15 tbsp flour (approx. 300 g)
  • 100 ml milk
  • 2 tbsp cocoa powder (for half the batter)

For the Filling:

  • 200 g butter
  • 140 g granulated sugar
  • 200 g dark cooking chocolate
  • 150 ml milk
  • 100 g ground walnuts
  • 50 g ground almonds (or substitute with an additional 50 g walnuts)

For Decoration:

  • Ground walnuts

Instructions

1. Prepare the Cake Layers:

  • Preheat the oven to 180°C (356°F) and grease a baking pan measuring approximately 30×20 cm.
  • In a mixing bowl, beat the butter and sugar until creamy. Add the egg yolks one at a time, mixing well after each addition.
  • Gradually fold in the flour and milk alternately until you have a smooth batter.
  • In a separate bowl, whisk the egg whites to stiff peaks and gently fold them into the batter.
  • Divide the batter into two equal parts. Add 2 tbsp of cocoa powder to one portion and mix until fully incorporated.
  • Pour the light batter into one half of the pan and the cocoa batter into the other half (or use two separate pans). Bake each layer for about 15 minutes, or until a toothpick inserted in the center comes out clean. Let the layers cool completely.

2. Make the Filling:

  • Heat the milk and sugar in a saucepan over medium heat, stirring until the sugar dissolves. Add the chocolate and stir until melted and smooth.
  • Remove from heat and let it cool slightly. Add the ground walnuts and almonds, mixing well.
  • Once the mixture is cooled to room temperature, beat the butter until fluffy and then mix it into the filling.

3. Assemble the Cake:

  • Place the light layer on a serving plate and spread half of the filling evenly over the top.
  • Add the dark layer and spread the remaining filling over it.
  • Sprinkle ground walnuts generously over the top for decoration.

4. Chill and Serve:

  • Cover the cake and refrigerate for at least a few hours or overnight. This resting time enhances the flavors and texture.
  • Slice into squares or rectangles and serve.
