Perfect Yogurt Yeast Dough for Mini Pizzas or Buns (Without Proofing Time, Prepared in Minutes)

Ingredients:

  • 600g flour
  • 1 packet baking powder
  • 10g fresh yeast
  • ½ tsp sugar
  • ½ tsp salt
  • 50g butter
  • 100g natural yogurt or sour cream
  • 250ml water
  • 2 tbsp oil
  • Optional: ham, cheese, oregano, ketchup, tomato sauce

Preparation:

1. Prepare flour and baking powder:
Begin by sifting the flour into a large bowl to avoid any clumps. Add the baking powder, crumbled fresh yeast, sugar, and salt, and mix the dry ingredients well. Sifting the flour not only helps prevent clumps but also ensures a finer texture in the dough, which leads to better baking results.

    2. Add wet ingredients:
In a separate bowl, combine warm water, melted butter, natural yogurt (or sour cream), and oil. Be sure the water is not too hot, as it could damage the yeast. Warm water helps activate the yeast quickly and results in a softer dough.

      3. Knead the dough:
Gradually add the wet mixture to the dry ingredients and knead everything into a smooth, homogeneous dough. If the dough is too sticky, you can add a little more flour, but be careful not to make it too dry. The dough should be soft but not sticky. This method allows you to skip the usual proofing time, as the dough will rise quickly during baking due to the baking powder and yeast.

        4. Portion the dough:
Divide the dough into 10 equal portions. Shape each portion into a small ball and place them on a baking sheet lined with parchment paper. If you’re making mini pizzas, press a small indentation in the center of each dough ball with a glass. This indentation serves as a space for filling, like ham, cheese, or other toppings.

          5. Fill (optional):
For mini pizzas, fill the indentation with some ketchup or tomato sauce and top with grated cheese, ham, or any other ingredients you like. The dough is incredibly versatile, allowing for plenty of creativity. If you prefer no filling, simply bake the dough portions as small buns.

            6. Bake:
Preheat your oven to 200°C (180°C fan). Bake the mini pizzas or buns for about 15-20 minutes, or until golden brown. Be sure to check that the dough is fully baked and has achieved a beautiful golden color. Depending on the toppings, the baking time may vary slightly, so check after 15 minutes.

              7. Enjoy:
Once the mini pizzas or buns are out of the oven, let them cool slightly before serving. They are best enjoyed warm but can also be eaten later. These little treats are perfect for parties, picnics, or a quick dinner.

                Tips for Perfect Preparation:

                • Variation in fillings: The dough is very versatile, and you can fill it to your liking. For a vegetarian option, you can use fresh tomatoes, peppers, onions, and olives. For a savory version, various types of cheese or cold cuts work great.

                • For extra fluffy buns: If making buns without fillings, shape the dough balls into round shapes and drizzle a little oil on top before baking for a shiny finish.

                • Perfect for meal prep: These mini pizzas or buns can be prepared in advance and frozen. After baking, they freeze well and can be reheated in the oven when needed, providing fresh snacks whenever you want!

                • Healthier version: For a healthier alternative, you can replace the regular flour with whole wheat flour and swap butter for olive oil. This gives the dough a unique flavor and is also healthier.
