Ingredients:

For the crust:

  • 140 g crushed oats or biscuits
  • 60 g ground walnuts
  • 120 g butter
  • 20 g honey

For the filling:

  • 600 g quark (fresh cheese)
  • 270 g cream cheese
  • 40 g honey
  • 1 egg
  • 1 tbsp vanilla pudding powder

For the glaze:

  • 150 g white chocolate
  • 20 g dark chocolate
  • 30 g coconut oil

Instructions:

Step 1: Preparing the Crust

  1. Mix the crushed oats (or biscuits) with the ground walnuts, melted butter, and honey until combined.
  2. Spread the mixture evenly across the bottom of a springform pan lined with parchment paper, pressing it firmly to create an even base.
  3. Preheat your oven to 180 °C (355 °F) and bake the crust for 8–10 minutes.

Step 2: Making the Filling

  1. In a mixing bowl, combine the quark and cream cheese, whisking until smooth.
  2. Gradually add the honey, egg, and vanilla pudding powder. Stir until fully incorporated.
  3. Taste the mixture and adjust the sweetness if necessary, depending on the sweetness of your chosen honey.

Step 3: Baking the Cheesecake

  1. Pour the filling over the pre-baked crust and spread it evenly.
  2. Reduce the oven temperature to 155 °C (310 °F) and bake for 50 minutes.
  3. After baking, leave the cheesecake in the oven with the door slightly open for at least 30 minutes to cool gradually and prevent cracking.

Step 4: Preparing the Glaze

  1. Melt the white chocolate with the coconut oil in a heatproof bowl over simmering water (double boiler method). Stir until smooth.
  2. Drizzle the dark chocolate over the white chocolate glaze for a marbled effect.

Step 5: Assembling the Cheesecake

  1. Once the cheesecake is completely cooled, pour the white chocolate glaze over the top and let it set in the refrigerator for a few hours or overnight.

Pro Tip: The longer this cheesecake rests, the better it tastes! Let it chill overnight for the ultimate creamy and flavorful experience.

Serve chilled, and enjoy the perfect blend of creamy filling, nutty crust, and decadent chocolate glaze!
