
Ingredients
- 150 ml sparkling water
- 80 ml vegetable oil
- 150 g granulated sugar
- 300 g all-purpose flour (Type 400)
- 12 g baking powder (about 3 tsp)
- Zest of one orange
- 1 tsp vanilla extract
- 1.5 tbsp cocoa powder
- 3 tbsp jam (any flavor – use your favorite)
(For this recipe, a 25×10 cm loaf pan works perfectly.)
Preparation
1. Preheat and Prepare the Pan:
- Preheat your oven to 200°C (390°F).
- Grease your loaf pan lightly with oil or line it with parchment paper for easy removal.
2. Mix the Wet Ingredients:
- In a large bowl, combine the sparkling water, vegetable oil, and vanilla extract. Stir gently until well mixed.
3. Incorporate the Dry Ingredients:
- In a separate bowl, sift together the flour, sugar, and baking powder. Gradually add the dry ingredients to the wet mixture, stirring gently with a whisk or spatula. Avoid overmixing to maintain the cake’s light texture.
4. Add Flavor and Cocoa:
- Fold in the orange zest to infuse the batter with a fresh, citrusy aroma.
- Pour about 2/3 of the batter into the prepared pan.
- Mix the cocoa powder into the remaining 1/3 of the batter until well blended. Pour the cocoa mixture over the plain batter in the pan, creating a layered effect.
5. Add Jam for Sweetness:
- Spoon the jam in dollops across the top of the batter. Using a knife or skewer, swirl the jam gently into the batter to create a marbled pattern.
6. Bake:
- Place the pan in the preheated oven and bake for approximately 50 minutes. Since baking times can vary depending on your oven, start checking the cake at 45 minutes by inserting a toothpick into the center. If it comes out clean, the cake is done.
7. Cool and Serve:
- Allow the cake to cool in the pan for 10–15 minutes, then transfer it to a wire rack to cool completely. Slice and enjoy this soft, fragrant vegan treat with a cup of tea or coffee!
